Vadouvan Chicken Curry

Ingredients
1 pound chicken thighs
1/2 cup coconut milk (full-fat preferred)
1 tbsp extra virgin olive oil
1 tbsp Caravan Spices Vadouvan Curry
1 tbsp tomato paste
2 cloves garlic, minced
2 tsp red curry paste
1/2 tsp salt
1/4 tsp pepper
Steps
Cut the chicken into approximately 1 inch cubes or strips.
Add the olive oil to a deep skillet and heat over medium-high heat.
When the oil is heated, add the Caravan Spices Vadouvan Curry powder into the oil and cook for approximately 2 minutes, until fragrant.
Add the red curry paste, garlic and tomato paste and cook for another 2 minutes.
Season the chicken with salt and pepper and add to the pan, tossing to coat thoroughly.
Reduce the heat to medium and cook until the chicken reaches an internal temperature of 165 degreed Fahrenheit, or apprximately 5-7 minutes.
Add the coconut milk and continue to cook another 5-10 minutes, or until the sauce reaches your desired thickness.
Serve the Vadouvan Curry over rice and enjoy!
