Peanut Satay with Creamy Peanut Sauce
These grilled satay chicken skewers are quick to marinate and cook and pack quite the flavorful punch! The peanut dipping sauce with some lime juice spritzed on top make this dish a must-try!

Ingredients
Marinade
2 pounds boneless skinless chicken breasts or thighs
1 cup coconut milk (full-fat preferred)
1/4 cup lime juice (2 limes)
2 tbsp soy sauce
2 tbsp red curry paste
4 tsp Caravan Spices Satay Seasoning
12 bamboo skewers
Creamy Peanut Dipping Sauce
3/4 cup coconut milk (full-fat preferred)
1/2 cup peanut butter
1/2 cup brown sugar
1/4 cup lime juice (2 limes)
1 tbsp red curry paste
1 tbsp chili garlic sauce
Steps
Soak bamboo skewers in water approximately 30 minutes before cooking.
Cut the chicken into approximately 1 inch cubes, or alternatively in 2 inch long strips.
In a bowl, stir together all marinade ingredients until well combined. Add the chicken and marinate in the refrigerator for at least one hour. Longer marinadte times, up to 12 hours, will result in more flavorful chicken.
Once marinated, skewer the chicken onto the bamboo skewers, leaving a small gap between each piece.
Grill the chicken on medium high heat until the chicken reaches an internal temperature of 165 degrees Fahrenheit, approximately 10 minutes. Turn once during cooking. (Alternatively, you could cook on the stovetop using a grill pan for 15 minutes over medium heat, or in the oven at 450 degrees for 15 minutes, followed by a minute under the broiler).
While the chicken is cooking, whisk together the Creamy Peanut Dipping Sauce ingredients in a medium bowl until smooth.
Garnish the chicken satay skewers with cilanto and a drizzle of the Creamy Peanut Dipping Sauce
