Oaxacan Potatoes

This smoky, nutty, citrusy recipe really takes your roasted potatoes to the next level. Replace potatoes with...pretty much any vegetable for an equally delicious side dish!

Oaxacan Potatoes

Ingredients

  • 1 lb baby Yukon Gold potatoes

  • 1 tbsp extra virgin olive oil

  • 1.5 tbsp Caravan Spices Oaxacan Vegetable Seasoning

  • Salt

Steps

  1.  Pre-heat the oven to 400 degrees Fahrenheit.

  2.  Clean approximately 1 lb of baby Yukon Gold potatoes

  3.  Cut the potatoes in half or quarters so they are approximately a consistent size to ensure consistent cooking time.

  4.  Toss the potatoes with olive oil, Oaxacan seasoning and a pinch or two of salt, to taste.  

  5.  Place the potatoes on a baking tray and place in over for approximately 20 minutes, flipping halfway through, until golden brown.
