Oaxacan Potatoes

Ingredients
1 lb baby Yukon Gold potatoes
1 tbsp extra virgin olive oil
1.5 tbsp Caravan Spices Oaxacan Vegetable Seasoning

Steps
Pre-heat the oven to 400 degrees Fahrenheit.
Clean approximately 1 lb of baby Yukon Gold potatoes
Cut the potatoes in half or quarters so they are approximately a consistent size to ensure consistent cooking time.
Toss the potatoes with olive oil, Oaxacan seasoning and a pinch or two of salt, to taste.
Place the potatoes on a baking tray and place in over for approximately 20 minutes, flipping halfway through, until golden brown.
